Eggs Benedict

Recipe-

Ingredients

1/2 of an English muffin, 1 slice of Canadian bacon(may substitute prosciutto, ham, bacon, smoked salmon or avocado instead), 1 poached egg and Hollandaise sauce:{ 3 egg yolks, 1 and 1/2 tablespoons of cold water, 3 teaspoons of lemon juice, 1/3 cup clarified butter(warm), pinch of salt , cayenne red pepper, hot water(as necessary)}.

Directions-

1. In a stainless bowl over simmering water or in top of a double boiler, vigorously and continuously whisk together egg yolks , cold water and lemon juice until mixture thickens and doubles in volume.

2. Continue whisking; gradually drizzle in warm clarified butter, salt and cayenne. Mixture should thicken and double again in volume.

3. Remove from heat. Add salt and pepper to taste.

4. Keep in warm spot until ready to serve. If sauce gets too thick whisk in a couple of teaspoons of warm water at a time until desired consistency is reached.

5. To assemble the final product, first put down a piece of Cannadian bacon, then the poached egg, sprinkle some salt and pepper and pour the Hollaindaise sauce over the top.

The breakfast culture is an important part of what being an American is all about. Americans love their breakfast foods. Pancakes, eggs and bacon are the crowd features but my personal favorite is Eggs Benedict. A typical American breakfast however, is often characterized by being very sweet. Most youth have grown up eating sugary cereals, toaster, waffles and maybe if we were lucky some French toast or chocolate chip pancakes.

Regardless of what each of us grew up eating, we all share a large appreciation for breakfast foods, sometimes we even flip flop and eat breakfast for dinner!
