Chili Pork Stew (Nagaland- India)

RECIPE

Ingredient-

Pork(cut int pieces) , fermented soybean( not compulsory but recommended to get the original taste), garlic, dried king chili (not recommended if you are not a chili person), fresh green chilies, potatoes and yam.

Directions-

1. Cut around 7-9 green chilies( not a fan of chilies, then limit it to 4-5) and put it into the boiling water.

2. Add the meat, crushed the garlic and keep it aside.

3. Cut the potatoes and add it 15-10 mins before taking out the dish.

4. Roast the king chili and keep it near the coal(inside the ash), take out after some seconds. Clean it in hot water and then put it into the dish.

5.Wait for the meat to be soft or ready (it will take a hour and half), then put the crushed garlic, the fermented soybeans and sufficient salt.

(Can put more ingredients as you wish as long as the flavor doesn't change much)

6. Once the meat and the fermented soybeans are mixed well, serve it hot and ready.

A home-cooked dish from Nagaland, northeast of India, this dish a special to the locals who are fond of chili dishes. With the fermented soybeans and the king chili( the hottest chili in the world), one should really be prepared if not used to chili foods.

The flavour just explodes in your mouth and leaves you dumbfounded. A combination of old culture and modern way of cooking, this chili pork stew is one of the favourite and easy to cook dish for the locals
